Preheat the oven to 400 degrees F (204 C). Also fill a small baking pan halfway with water and set on the floor (bottom) of the oven. This will provide steam to help the cauliflower cook more evenly.
Rinse and dry the head of cauliflower and carefully cut off the bottom stalk without removing too much of the core. You want the entire head intact for baking. Peel away any remaining green leaves and place in a cast-iron skillet (or other oven-safe pan).
In a mixing bowl, mix together avocado oil or melted coconut oil, water, shawarma spice blend, harissa paste (optional), maple syrup, and salt. Taste and adjust flavor as needed, adding more shawarma for smoky flavor, harissa paste (optional) for spiciness, maple syrup for sweetness, or salt for more intense overall flavor.
Flip your cauliflower upside down and pour on most of the sauce. Let the sauce pour down the core, shake it around so it infuses the center, and then flip the cauliflower over and use a brush to rub the leftover sauce (including any that seeped into the pan) all over the exterior for maximum flavor. Place cauliflower core-side down before baking and add an extra pinch of salt and spice blend to the exterior for extra flavor.
Roast the skillet in the oven for 35-50 minutes (depending on the size of the cauliflower) or until a knife easily penetrates the core. If you prefer softer cauliflower, then roast for longer. For cauliflower with a little bite, roast for less time.
To brown the exterior, increase heat to high broil and roast 2-4 more minutes, watching carefully as not to burn.
Remove from the oven and let the cauliflower rest in the pan for 5-10 minutes to continue softening the core, if needed. Enjoy as is or garnish with desired sauces and sides. We went for quinoa cooked with Curry powder.
Leftovers can be stored in the refrigerator for up to 4 days. Reheat in a 350-degree F (176 C) oven until hot.

I'm with you. It's a great way to save a bit of money on Christmas gifts, which I'm sure no one would object to, but there are a few ways we can be more sustainable with our purchases this year. The sales are my favorite time to shop, and I often get tempted by things I wouldn't have bought otherwise, but I have compiled some tips on how we can shop more sustainably and maybe save some money.
Will it be used?
Whether you're buying a gift for someone else or treating yourself after a difficult year, consider whether the item will actually be used. In addition to cost-per-use going down, it won't end up in the trash any time soon, so the user/you will really appreciate it. The same applies to homewares (will it be loved? ), clothing (will it be worn?), and skincare (will it be used up?). If the answer is yes, then great! That is a conscious gift-giving decision.
Think packaging.
Companies need to stop packaging their gift sets in plastic. I'm mostly thinking of those beauty gift sets that come in plastic molded packaging. An alternative would be to use reusable gift bags or recycled cardboard instead. It would be great to have unwrapped everything on Christmas Day and actually have no wrapping or packaging that couldn’t be recycled. Large companies really need to examine this, but for now, I guess it's up to us to decide.
Support Small Business
In this year's holiday shopping more than ever, there has been a focus on supporting small businesses. At the time of lockdown, we were shopping small to keep our businesses local, and now we're shopping small to make them happy this Christmas. Shopping small also often means making eco-friendly choices as they in turn only buy and use what they need, use more sustainable options in their packaging, and don’t have large processes that use up many resources.

How often are we tempted by an item just because it’s on sale? A conscious purchase also means considering whether we would have bought the item if it wasn't on sale, so we can determine if we want it.

In 1990, the arrival of the famous disposable pods on the market did not improve the situation. In Italian, tiramisu means "pick me up" and its origins remain murky. In spite of the fact that the first records of this dessert didn't appear in books until the 1960s, legend has it that the matron devised it to replenish the customers of a brothel after the night was over.
The traditional mascarpone in this tiramisù is substituted with a cheesy vegan cream, combined with a thicker version of vegan mayo used as whipped cream. The sweet mayonnaise can be replaced with store-bought whipped cream to make this recipe faster.
Although you can use other plant-based milks, such as rice milk (although they might have a gellier consistency), I recommend using soy milk for the "sweet mayo" since it has higher fat levels than other alternatives, resulting in a thicker end product.

In this recipe, it's best to stay away from olive oil because it has a very strong flavor, while coconut oil will solidify in the fridge, so always use a neutral-tasting oil.

INGREDIENTS
Vegan whipped cream
Mix the vanilla extract or the seeds from a vanilla bean with corn starch in a pan. Slowly stir in the almond milk to avoid lumps. Bring the cream to a boil over low heat, stirring continuously until it becomes a thick cream. Remove from heat, transfer to a bowl and allow to cool.
Whipping cream can be made either with an immersion stick blender or with a regular blender.
If you are using an immersion blender- Combine all ingredients in a blender cup, place the immersion blender in the cup, so it sits tightly on the bottom, and pulse until the cream is emulsified. You can then move the blender up and down to incorporate any remaining oil.
Using your regular blender, combine all the ingredients except the oil in the blender. Add the oil gradually, starting at low speed and gradually increasing it until the cream has thickened.
To make vegan mascarpone, gradually fold in the almond milk cream into the soy cream until smooth.
It's time to assemble the tiramisù. You may use one deep dish or multiple glasses for single portions; this recipe makes enough to serve four generous portions. To create the first layer of the dish, sweeten the coffee a little, then dip the vegan biscuits in and place at the bottom. Layer the vegan mascarpone on top. Continue layering until the last layer is mascarpone. Finish by sprinkling cocoa powder on top. Rest in the fridge for a few hours, then enjoy in your vegan tiramisù!

Water pressure / pump malfunction, mold build up, frequent full drip tray? It's well and truly time for a spring clean. Make sure your coffee capsule machine has been recently cleaned, descaled and is in optimum working condition. “Descaling” is the act of stripping calcium and lime deposits from your machine’s surfaces, assisting the pump to create a pressure build-up that produces a lovely crema to top your brew. If you want to ensure your coffee machine is producing the best flavor and optimal brew pressure, it should be cleaned once a week and descaled once every three months. Maintaining and regularly cleaning your coffee machine not only extends its life by keeping the internal mechanics in good condition, it also ensures the quality of the coffee you brew.
Tip: Don't - Use vinegar! Vinegar doesn't remove coffee oils the way a professionally formulated coffee machine cleaner does. Do - Use a cleaning solution that will remove oils, stains and break down grime.
Pre-filled coffee capsules can often contain added flavor enhancers (think dehydrated powders or concentrates) to give the impression of a "stronger" coffee. There is still some public misconception around flavor intensity and caffeine content - a stronger flavored pod coffee does not necessarily equate to a higher caffeine content!
Nespresso states that they use 95% Arabicas and 5% Robusta's in their Grand Crus capsules. Some Italian blends often contain some Robusta beans – heresy for those brought up to think only arabica is fit for drinking! But a touch of Robusta in a blend gives it that characteristic body. To replicate this flavor intensity, you might want to try a similar blend. We recommend a strong dark roast, or Italian-style roast to achieve a stronger tasting brew, as stronger coffee tends to have a thicker and darker crema.
It's also important to note that during extraction, different compounds extract at varying rates: Sharper, acidic, fruity flavors tend to come out first, followed by the deep, heavier ones, and lastly the woody, bitter notes. A well extracted cuppa has a balance of these!
And remember - fresh is best. Head to your local roaster or coffee shop to chat about their available blends.
It's not only the roast that impacts your final brew, you'll find that the correct grind also contributes to the strength of your coffee and quality of crema. In general, a fine grind works best for reusable pods - this means that the water has to work a little harder to get through that ground coffee, creating strong, fuller bodied espresso and a beautiful extraction. Whereas a coarser grind tends to produce gentler flavors and a lighter color cream. For the majority of our reusable pods, we recommend asking your local coffee shop or roaster to grind the beans to medium-fine for optimal results.
If you grind at home, using a burr grinder will help you achieve a better brew (blade grinders can create too much dust). Ensure your capsule is tamped firmly and filled to the top.
Tip: A grind that is too fine can be a common cause of slow extraction. We suggest experimenting with pressure - pack the coffee more loosely with minimal tamp, or simply fill and apply the lid. At the other end of the scale, if your grind size is too coarse you may experience watery coffee, we suggest applying more pressure when tamping.
when the result is not great, 9 out of 10 times it is due to the type of coffee used.
It's important to understand that by making the move to refillable pods, you're also shifting to using 100% pure, freshly ground coffee beans. Pre-filled coffee capsules can contain added flavor enhancers (think dehydrated powders or concentrates) to give the illusion of a "stronger" coffee. While you might see a lot of marketing around the premium taste that can be experienced from single-use pods, essentially these are pre-packaged capsules of ground coffee that have undergone many processes during the various stages of manufacturing before they eventually make it to your kitchen. Many mainstream retailers of these products are pretty reluctant to share their roast dates, with some advertising that their pods have a shelf life of up to 12 months!
If organic robust flavors, optimum freshness, caramel-y aromas and overall deliciousness are more your thing, then investing in beautiful unprocessed Arabica blends for your reusable pods is going to make your heart sing!
And anyone who is even remotely health conscious will certainly appreciate their new additive-free, no-added-nasties morning espresso! When it comes to comparing plastic pods with freshly brewed espresso from a reusable capsule, there really is no competition.
How much pressure you apply during tamping is a critical part of the process to make a good coffee. Even the taste of coffee itself can change depending on the amount of pressure you use!
Our advice is to play with it until you find the right balance for you.
COFFEE AMOUNT
Usually, the best result is obtained when the capsule is not filled with pressed coffee to the top as this usually means the water will flow through with difficulty and the result will not be optimal.
The best set up is to have your coffee after tamping slightly below the top of the capsule, this way when you put the lid back on you will barely have to put any pressure to close it. See picture below. You can add more coffee if you like your coffee intensely, but go back to putting in the recommended amount if you see water flowing through with difficulty.
TROUBLESHOOTING and EXTRA TIPS
The Pod doesn't fit within the machine?
Sometimes, usually when too much coffee ground has been put into the capsule, the machine will not close after having put the capsule inside. A simple trick to avoid this problem is to push the capsule on the side opposite the lid
(backside) so that it fits.
In our experience, cream is more present when fine ground coffee is being used. It will also very much depend on your coffee, some coffee produce naturally a lot of cream, some do not.
After inserting a capsule into the brewing chamber, press the short shot button and let the machine run until a drop or two of coffee begins to drip out. Quickly press the shot button again to stop the flow. Wait a few seconds and restart the extraction by pressing the button again (allowing the shot to run to completion.) This method helps to create a more flavorsome, overall creamier extraction.
Did you know baristas increase a shot size based on the amount of milk? (we recommend almond milk home made)
You may want to consider the extraction size you are using, or brew a double shot. If you only use a single shot in a large cup, once you fill it with milk, you're going to lose the lovely characteristics of the coffee (flavors and aromas!) as the milk overshadows it.
To achieve a lovely, intense coffee with pods, one foolproof method is to brew double ristretto style: Use two capsules and brew 2 x short shots (approx 25mL per shot). A ristretto will also extract less acidity, so you'll end up with a lovely sweet, rich cup of coffee too. A high intensity coffee roast supports this kind of extraction perfectly.
Note: Brewing a long coffee? To get the absolute best extraction from reusable pods, we strongly recommend using the standard espresso shot (using the short shot button) on your coffee machine. This provides the perfect amount of water to extract the best elements of the coffee (oils, aroma and flavor - yum)!
When brewing a long style coffee, you'll probably notice "blonding". Blonding is the color transition of a pour from dark brown to a light, uniform pale blond. This normally occurs in the last third of the pull and is a signal to end the pour. The overly-blond portion of the brew is thin, nearly flavorless, and if allowed to continue will dilute the body and taste characteristics of a shot.
Brewing a long shot can adversely affect your extraction. For a better tasting long or mug coffee, try the following:
Lungo - use 2 pods each on a 40mL extraction setting
Long black - use the short shot button and top with boiling water (by running your coffee machine without a pod in it)
The other bonus of brewing this way? You will actually extract less acidity from the coffee, resulting in a less bitter tasting cuppa.
CLEANING AND COMPOSTING
After having used the capsule, be careful to wait a few minutes before grabbing it as it will be hot. Once its temperature has decreased, grab it and empty the coffee inside to your composter or straight to a plant or garden (coffee grounds make great fertilizer). Then, clean it with water.
You can also put it in the dishwasher.
Before drying the capsule, make sure there is no more ground coffee stuck anywhere.
According to The Guardian, around 18,900 liters of water are needed to produce 1kg of coffee beans—more than two eight-minute showers’ worth of water.
The environmental impact of coffee goes further than just water usage. For every cup of coffee consumed, about one square inch of rainforest is destroyed and coffee farms lead to chemical runoffs in rivers, biodiversity loss, and soil erosion.
Sustainable coffee is coffee that is grown and marketed for its sustainability. This includes coffee certified as organic, fair trade, and Rainforest Alliance.
Coffee production can be made more sustainable by incorporating practices such as better crop-management and water use practices, using pheromone boxes to ward away insects in lieu of pesticides, composting coffee bean waste to use as fertilizer, using coffee hulls as fuel instead of cutting down eucalyptus trees, shade-growing, and reforestation.
Single-use bags & pods – roasted coffee are generally delivered in bags or pods that are made from plastic & aluminum. Only about 5% of all coffee pods are made entirely of recycled and recyclable material. Therefore, it is correct to say that coffee pods, although very few of them, are entirely recyclable. The remaining 95% are generally made from non-recyclable composite plastic which takes a long time to biodegrade.
Deforestation – slash and burn activity clears land for farming cheap Robusta coffee, which is generally blended into other poor quality coffee. Large spaces with no shade trees allow for increased mechanization with a devastating environmental impact. Soil erosion, removal of natural habitats for wildlife, and reduced absorption of carbon dioxide are just some of the negative effects.
Transportation of coffee – the truth is that just a fraction of coffee grown is consumed in the producing countries. Coffee can only be grown in a narrow band across the globe, between the tropics, so most are sent for export on polluting ships around the world.
So what can you do with all this info? There’s not a lot you can do about these last two bummers, but there is still a big impact you can do even from your own home.
Let's start by saying yes, you can recycle some of them, does it happen? unfortunately no. most of them go back to landfills and thrown away in the trash.
Aluminum-based coffee pods are fully and widely recyclable and are better for the environment than plastic ones. The challenge with recycling coffee pods is that they are designed in a manner that does not, in itself, promote the idea of reusing, recycling, or composting.
Another problem with recycling coffee pods is that the plastic pods make up almost 100% of all pods out there. Unfortunately because of that, the aluminum used to create each capsule is too small for collection facilities to properly process. The recycling system is usually designed to handle larger items like cans and bottles, and as such, the small amounts of aluminum in the coffee pods will raise a challenge when recycling.

This recipe allows you to control the amount of sweetness and infuse flavors as well as play around with the thickness. It’s my go-to when I’m craving homemade dairy-free milk.
Plus, it’s zero-waste and super simple to make, requiring just 2 ingredients, 10 minutes, and a blender!

To make homemade almond milk, start by soaking a measured cup of almonds overnight in cool water. (we recommend using organic almonds). The water is then drained out (do not use drained water) and the almonds are added to a blender along with fresh water, salt, and any additional add-ins (such as dates for sweetness or vanilla, cacao powder, or berries for flavor variations).
US Customary – Metric
Add your soaked almonds, fresh water, salt, and any additional add-ins (optional) to a high-speed blender and blend until creamy and smooth. Keep it running for at least 1-2 minutes so you get the most out of your almonds.
Strain using a cotton nut milk bag or 2 tricks – a thin dish towel or my favorite - a cloth nappy. Simply lay a clean nappy over a mixing bowl, pour over the almond milk, carefully gather the corners, and lift up. Then squeeze almond milk through a nut milk bag into a bowl until all of the liquid is extracted. Discard pulp, or save for adding to baked goods or even smoothies.
Transfer milk to a jar or covered bottle and refrigerate. Will keep for up to 4-5 days, though best when fresh. Shake well before drinking, as it tends to separate.

If you’re curious what to do with leftover almond pulp, there are many recipes, but the easiest will be adding it to a smoothie.
Smoothies are a wonderful hodgepodge situation where you can stuff with a wide variety of nutritious ingredients that you wouldn’t necessarily eat all on your own. Almond pulp adds texture, thickness and fiber to your favorite smoothie recipe. Start off by adding 1-2 tbsp. into the blender and then work up to 1/4 cup or more!
How Long Does Homemade Almond Milk Last?
How long it lasts will depend on a variety of factors such as how well you sterilize your equipment, the freshness of your ingredients, and the temperature of your fridge.
We find that on average, DIY almond milk lasts 4-5 days.
If it becomes sour before then, make sure to fully sterilize your equipment before using it by running it through the dishwasher or pouring boiling water into your jars (make sure the jars aren’t too cold when you do this or they may crack). Also, make sure to soak your almonds overnight in the fridge rather than at room temperature.

After trying out many recipes, we found the perfect two. Homemade All-Purpose Surface Cleaner for you, one with vinegar and another without. Both are water-based and all-natural ingredients such as baking soda, lemon juice, essential oil, and castile soap.
You can use them for all-purpose at your home, like the kitchen, bathroom, and any kind of surface. Make sure you wipe the surface with a towel after spraying.
How to make - Measure baking soda into a clean spray bottle. Add the water and then shake really well until the baking soda dissolves, less than a minute. Add the castile soap and essential oil. Gentle shake the cleaner. This cleaner should be stored in a cool & dry place.
How to make - Pour all the ingredients into a 500ml spray bottle (use a funnel, if needed). Gently shake the cleaner. Due to the fresh lemon juice, this cleaner should be stored in the fridge between uses.
Shake the spray bottle well before spraying the surface and wipe off the surface with reusable unpaper towels to avoid stains.
Do NOT use a vinegar cleaner on marble or granite. However, you can use the castile soap cleaner on sealed marble or granite.
